The story
Marie is a French restaurant at Wedekindplatz 1 in Hannover's Oststadt, and it holds one Michelin star (2026) for its high quality cooking. The kitchen serves modern French cuisine with Asian touches through set menus rather than an à la carte card.
Sven Holthaus owns the restaurant and runs the kitchen, with Christian Oemus as sous chef and Niklas Krämer managing the dining room. Der Feinschmecker notes that Holthaus has never cooked in a Michelin-starred restaurant, yet he adapts haute cuisine classics freely. Chawanmushi might arrive with caviar, or with radish, shiitake and beurre blanc.
The menus change every month and run five or six courses, with optional add-ons such as beef tartare with caviar. The current menu lists skrei with butternut squash and sea buckthorn, lamb with wan tan and gochujang, and Camembert with Périgord truffle and Thai curry. Der Feinschmecker also describes Wagyu finished with goulash broth and black feather chicken with truffle and curry.
The dining room seats 28 in a clean, modern interior, and a small terrace opens in summer. From Tuesday to Saturday, 18:00 to 19:30, guests can perch on bar stools at the oyster and caviar bar with a glass of champagne. The oysters come from La Famille Boutrais, a Breton family farm in Saint-Coulomb. The wine list is short and draws on small producers in Germany, France and Austria.
