The story
Handwerk, at Altenbekener Damm 17 in Hannover, is a modern cuisine restaurant that earned one Michelin star in 2026. The kitchen works with a tasting menu of five or six courses, and the open kitchen in the main dining room lets guests watch the brigade at work.
Thomas Wohlfeld leads the kitchen, and his cooking rests on quality ingredients and careful technique. He times international and local produce, such as cod, scallops and pasture-raised chicken, so each one arrives at its peak. Vegetarian dishes built on melon and bell pepper appear regularly. The team also prepares whole animals and fish for the menu.
Recent courses have included tomato with raspberry and almond, hamachi with kohlrabi and yuzu, and quail with pointed cabbage and shiso. Guests can add a winter truffle upgrade with brioche and Deichkäse. The setting is elegantly minimal and informal, and staff use first names freely. Ann-Kristin Wohlfeld pours mainly from small producers, including natural and orange wines, with a focus on Germany and France.
