The story
Jante, at Marienstraße 116 in Hannover, is a modern cuisine restaurant that earned two Michelin stars in 2026. Chef Tony Hohlfeld cooks an international menu, and his wife Mona Schrader leads the wine service and the pairings.
Hohlfeld builds each plate from simple and elaborate components, and the colours and flavours stay vivid. Der Feinschmecker, which gives Jante a 4, describes pairings such as char with whey and ginger, or peach with poppy seed and radicchio. The critic notes that these combinations are unusual without being loud.
Schrader often pours bottles from Germany and Austria, chosen to match the aromas on each plate. The dining room has floor-to-ceiling windows, wooden floorboards and cozy armchairs, with candlelight in the evening. Cutlery sits in drawers built into the tables, so guests help themselves and the service stays unhurried.
The bar runs a SIP & BITE menu that needs no reservation. Bites include ravioli with egg yolk, lobster with wild garlic, and a lava cake served with white truffle ice cream. Drinks range from beer and lemonade to wine or champagne.
