The story

THE LISBETH Hamburg: Modern North German Fine Dining with a Michelin Star

THE LISBETH is a modern North German restaurant at Deichstraße 32 in central Hamburg, and it holds one Michelin star for 2026. Chef André Stolle cooks regional dishes through a contemporary lens inside a historic building that was fully renovated.

Northern German classics, reworked

Stolle serves eel in jelly with pumpernickel and green pepper, and cod confit with a crispy oyster and turbot brandade. His signature fish sandwich is a nod to Hamburg, though it comes with teriyaki-glazed eel and caviar rather than the version sold at the stalls outside.

The room and the wine list

The space was once a pub, and it now feels airy and bright, with plenty of wood and widely spaced tables. Sommelier Vincent Skroch pours from a selection of 90 wines, with a focus on Germany and France.

Concept Northern German-inspired fine dining in a historic setting. The menu "Hamburger Renaissance" is served with five or six courses. Culinary Style In the room where a pub used to be, André Stolle interprets Northern German dishes in his own way at a more casual restaurant. For example, he serves eel in jelly with pumpernickel and green pepper, or confited cod with a crispy oyster and turbot brandade. His signature dish – fitting for Hamburg – is a fish sandwich. However, this differs from those sold at the stalls outside: it comes with teriyaki-glazed eel and caviar. Wine Sommelier Vincent Skroch offers a selection of 90 wines, with a focus on Germany and France. Atmosphere It is airy and bright, featuring plenty of wood and widely spaced tables. Conclusion Northern German cuisine presents itself from a different angle – creative and consistently surprising.
