The story
Koer, at Maria-Louisen-Straße 3 in Hamburg, is a modern Nordic restaurant that earned one Michelin star for 2026. Chef Paul Decker and sommelier Joshua Stagraczynski run the room together, offering a bistro-style market kitchen built around the seasons. The restaurant sits between the Leinpfad canal and the Alster.
Paul Decker leads the kitchen as head chef and owner. The menu draws on seasonal and regional produce from partner farms and producers. Most dishes rely on Nordic ingredients, prepared with an emphasis on freshness and texture.
The rotating carte blanche menu is the house recommendation, and it can be served vegetarian on request. A recent review of the restaurant described an amuse-bouche of onion tart churro with sour cream and a Limfjord lobster tartare with radish and peas. The same reviewer found the chard rolls with chanterelles full of contrasting textures, though it wished for bolder seasoning at times.
Guests sit close together at small black tables, which keeps the atmosphere relaxed. The bar serves house creations, neo-classic cocktails and non-alcoholic options, while oysters and small bites are offered at the counter on a first come, first served basis. Joshua Stagraczynski curates a wide European wine selection, and the bar's cocktails are designed to complement it.
