The story
haebel holds one Michelin Star (2026) for its seasonal cooking at Paul-Roosen-Straße 31 in Hamburg's St. Pauli. The kitchen draws on French and Scandinavian influences, and the room seats just 14 guests.
Guests choose between Flora, a vegetarian menu at 149 EUR, and Fauna, the omnivore version at 169 EUR. The vegetarian menu is the foundation, and the omnivore one builds on it. Owner Fabio Haebel runs the house, and the open kitchen sits in full view of the dining room.
Der Feinschmecker, which gave haebel 3 in 2026, notes that the cooking centers on a few ingredients per dish and leaves plates uncrowded. Kohlrabi comes with red onion and remoulade. Cauliflower is paired with radicchio and egg yolk. Pumpkin is seasoned with vadouvan and served with dike cheese. The modern cuisine here follows the seasons closely.
The wine list leans toward biodynamic bottles. A full wine pairing costs 109 EUR, and a no and low pairing costs 99 EUR. The room is small and relaxed, a bistro with Scandinavian clarity and French lightness, in the middle of a lively nightlife district.
