The story
Nil, in Hamburg's St. Pauli district at Neuer Pferdemarkt 5, runs a Mediterranean-leaning international kitchen that earned a Michelin Bib Gourmand for 2026, recognizing good-quality, good-value cooking. The owners have welcomed guests here since 1989.
The kitchen combines German dining traditions with Mediterranean lightness, using seasonal produce from the region. The à la carte changes daily, and a four-course seasonal menu rotates each month. Vegetarian and vegan dishes sit alongside meat and fish on the card.
Recent menus have included cured venison fillet with truffle, baked Jerusalem artichoke and fermented kohlrabi, and Königsberger Klopse with beetroot salad, parsley potatoes and crispy capers. The Schlemmer Atlas awards it 2.5 Kochlöffel for 2026 and names pollock with spinach leaves and truffled ox cheek among the dishes served. Dessert might be a Valrhona chocolate mousse with mango ragout or an apple-cinnamon tiramisu with cranberry sorbet.
Service runs across three floors: the ground floor, a lower level, and a gallery, with a garden used in summer. The Schlemmer Atlas describes a trendy room with a large glass facade a short walk from the Millerntor Stadium. Next door, Nil N°6 is a bright space with a sunny courtyard terrace and an open kitchen built around a mobile Gaggenau cooking unit. It can be hired for private celebrations, and it also hosts cooking classes where guests work at the stove themselves.
