The story
Hirschen, at Breisgauer Straße 47 in Freiburg, serves Badische and French cooking and holds 2.5 Kochlöffel in the Schlemmer Atlas for 2026. It sits in the Lehen district, part of a four-star hotel.
The kitchen cooks traditional Baden dishes and adds seasonal truffle specialties when they are in season. The wine list is extensive, and the house distils its own schnapps. Werner Baumgartner advises guests on food and wine, and he carves and fillets at the table. The Michelin Guide lists Hirschen as Recommended for 2026.
The Gasthaus has low ceilings, dark wood and niche tables arranged around the counter, so the room feels sociable and private at once. Restaurant Mühlenbach is the lighter option, with large windows, high ceilings and pale colors. It serves the same menu and also hosts celebrations for up to 150 guests. In good weather the garden terrace under old trees opens in place of the Gasthaus and serves the same dishes.
