The story
Eichhalde sits at Stadtstraße 91 in Freiburg im Breisgau, where the kitchen cooks in a modern Italian style and has held one Michelin star since 2026. The restaurant is on the outskirts of the city, in the Herdern district.
The Feinschmecker guide calls the cooking progressive Italian haute cuisine. The signature dish is octopus with a nod to Naples: the tentacle is pan-fried and served with seasonal sides, then finished with an intense essence in the style of the street vendors once found around the port. Wagyu beef tongue comes with seasonal vegetables, and lamb appears as a fricassee with lemon sauce, egg and artichoke.
Modern art hangs on the walls, and black seating sits against dark brown veneered tables. The interiors are air-conditioned, and there is outdoor seating for warmer days. The wine list is mostly Italian, with many lesser-known labels and a small selection from leading regional winemakers.
