The story
Drexlers is a seasonal French restaurant at Rosastraße 9 in Freiburg im Breisgau, listed as Recommended by the Michelin Guide for 2026. The menu follows the market and the calendar, so the dishes change as the ingredients do.
Mario Fuchs leads the kitchen and co-runs the restaurant, with earlier posts in Freiburg, Italy and Berlin. The seasonal cooking is built on regional produce, much of it organic. Fish comes from breeders the kitchen knows personally, and the pasta is made in-house. Wild herbs and carefully prepared ferments appear as the seasons allow.
The dinner menu runs four, five or six courses and opens with an amuse-bouche. Dishes on the printed menus include a house-cured Mangalitza coppa with spring salad, trout with a freshwater bouillabaisse, and duck served with ramen and dashi. A vegetarian menu offers spinach dumplings with ricotta, sage and pumpkin. Dessert is apple with hay ice cream and crumble. The four-course menu is listed at 84 euros.
The Schlemmer Atlas awards the restaurant 2.5 Kochlöffel for 2026 and describes a light, unpretentious room where guests leave satisfied. The wine list comes from Ralph Schmidt, who also runs the Drexler wine shop. More than a dozen wines are poured by the glass, and the bottles include regional wines alongside selections from France, Italy and the USA.
