The story
Jae is a Korean fusion restaurant at Keplerstraße 13 in Düsseldorf, and it holds one Michelin star for 2026. The fine dining kitchen blends European classics with Korean aromatics, served in a small room with counter seats and two tables.
Chef Jörg Wissmann cooks in view of guests, and the counter seats sit close enough to watch the work. His background includes sous chef posts in starred kitchens across Düsseldorf and a stint as head chef at Agata's, where the restaurant earned its first Michelin star. He left that role in 2020 to open his own restaurant.
The menu is built around European ideas with Asian influences. Tender beef short ribs carry sweet bulgogi notes, balanced by fresh apple and tangy endive kimchi. Dessert pairs beet, blackcurrant and tonka bean. The menu runs six courses and can be ordered vegetarian.
The former corner pub now has a bright, minimalist interior with bar seating and two tables. Sommelier Emiko Fukuzawa pairs wine with each course from a list of around 200 international selections, and an alcohol-free pairing is also offered.
