The story
Ösch Noir, the fine dining restaurant of the Öschberghof hotel at Golfplatz 1 in Donaueschingen, holds two Michelin stars in 2026 for excellent cooking. Manuel Ulrich leads the kitchen, which follows a modern French line and works in full view of the guests.
Two menus form the core of the evening: the Menü Noir and the vegetarian Menü Vert, each running five to seven courses. Dishes can also be ordered à la carte, and a four-course Menü Petit Noir is offered as well. Der Feinschmecker describes the style as French haute cuisine built on first-class products, and gave the restaurant 4 in 2026.
Veal sweetbread arrives with veal tongue, Fregola Sarda, chard and Parmesan. Imperial pigeon is paired with pointed cabbage, plum and rice vinegar. The vegetarian menu includes house-made Knöpfle with Piemontese hazelnut, lettuce and Périgord truffle, or celery with pak choi, bergamot and miso.
Strings of glass beads separate the round, widely spaced seating groups, and the open kitchen is visible from the tables. Michael Häni, restaurant manager and sommelier, draws on a list of 3,500 positions, from major vineyards and well-known producers to newer discoveries.
