The story
Nightingale Thai Cuisine & Bar at Augsburger Straße 19 in Dachau serves Thai food in the old town and is listed as Recommended in the 2026 Michelin Guide.
May Carqueville grew up in a village near Buri Ram in northeast Thailand. Her grandmother cooked for the village festivals, and May helped her from a young age. Later, life in Bangkok shaped her cooking. The Schlemmer Atlas awarded the kitchen 2 Kochlöffel in 2026 for flavors from her homeland, presented in a modern, premium style.
The menu follows the Thai habit of sharing, so dishes arrive to be passed around. In the evening you find tuna tatar with chili-lime dressing and rice chips, and crisp duck bon bons with plum sauce. Among the curries, a duck leg is cooked sous-vide for 12 hours and served in red curry with pineapple and Thai aubergine. Lunch runs Wednesday to Friday and includes Khao Soi and Pad Krapao.
Cocktails come from the bar, and the wine list is built to meet sharp, sweet and sour notes. The kitchen cooks without glutamate or artificial additives. Dessert might be mango with sticky rice and coconut sauce, or a fried banana-cinnamon roll with vanilla ice cream. Private dining is also available.
