The story
Froschgrundsee at Schönstädt 14 in Coburg serves Franconian and German cooking on the edge of a nature reserve, and the Michelin Bib Gourmand (2026) recognises its good quality, good value kitchen. The restaurant sits beside the Froschgrundsee lake, with outdoor seating and a set lunch menu.
Smoker grill specialties appear on selected dates. The Schlemmer Atlas (2 Kochlöffel, 2026) points to roast specialties, smoked dishes, ceviche and ray wings. On Sundays and public holidays the kitchen turns to traditional Franconian fare, with classic roasts and house-made Klöße.
Hannes Scammell works as host and chef. He trained as a cook at the Parkhotel Egerne Höfe on Lake Tegernsee from 2002, then worked in Dresden, South Africa, Sweden, New York and Hamburg. He completed his Küchenmeister qualification in Heidelberg in 2016. Loreen Scammell runs the dining room.
House-baked cake, ice cream and a selection of coffees and teas are served every day. The menu blends modern cooking with Franconian tradition, using regional and seasonal produce where possible.
