The story
Das Bootshaus sits at Hafenstraße 47a in Bingen am Rhein, directly on the Rhine, and serves contemporary German food with a strong focus on vegetables. Michelin lists the restaurant as Recommended for 2026. It is part of the Papar Rhein hotel.
Nils Henkel leads the kitchen with a nature-oriented approach, and the dishes change with the seasons. The cooking blends regional produce with international influences. Alongside the à la carte menu, the restaurant offers a vegetarian Flora line and maritime dishes.
Der Feinschmecker awarded the restaurant 3 for 2026 and singled out the spice-crusted breast with a Togarashi-infused jus. It arrives with saffron fennel, pistachios and polenta. The guide also describes fjord trout with buttermilk, wasabi, sesame and chickpeas. On selected Saturdays, the chef's table seats guests at the pass for a six-course seasonal menu, with wine or an alcohol-free pairing included.
The dining room has antique wooden furniture, light linen and leather chairs, and it looks as though it has been that way for years. The best tables sit by the windows, where the view runs over the floodplains to the Rheingau vineyards.
