The story
BEES Restaurant at Am Rottland 6 in Rüdesheim am Rhein serves fusion and world cuisine where Asbach Uralt was once produced. The Schlemmer Atlas gave it 3 Kochlöffel in 2026.
René Bildesheim cooks in a kitchen that guests can see into. The menu changes regularly and comes in a small and a large version. Diners can also choose four to seven courses or order à la carte. Rather than a classic course structure, the card groups dishes by flavor direction and lets guests pick among them.
The international kitchen mixes Mediterranean ideas with crossover touches and local favorites. Der Feinschmecker (2.5 in 2026) singles out venison with al dente pasta, tomatoes and carrots, king crab with sriracha and cucumber, and turbot fillet with ginger. The current menu also lists lamb with vadouvan, lobster with yuzu and Jerusalem artichoke, and flank steak with biltong spice and polenta. Dessert ranges from malva with coffee and caramel to lychee with rhubarb and kefir.
Lighting is designed to bring out the modern interior and the set tables. Service is warm and knowledgeable, and the wine recommendations are worth following. A Rheingau Riesling is a fine choice, though nobody insists on it. A private room is available for events, from Christmas parties to weddings.
