The story
Genuss-Apotheke, at Schönaugasse 11 in Bad Säckingen, serves avant-garde and modern cuisine and holds one Michelin star (2026). Chef Raimar Pilz cooks in a small dining room in the old town, not far from the Rhine.
Pilz plates with the same precision he brings to his cooking, and tweezers are part of the daily routine. The herbs come from the restaurant's own garden. The menu opens with a prologue of oysters served as an emulsion with caviar and popped cucumber. Glazed wild pigeon with roasted salsify and amaranth sprouts is a typical main, and dessert might pair wood sorrel with black tea and birch wood aromas.
Annett Ronneberger runs service and the wine list, choosing a glass for each course. Wines from Kaiserstuhl and Markgräflerland feature most prominently. Guests who prefer no alcohol can order a pairing of juices from the Manufaktur Jörg Geiger. A strictly vegetarian menu is available on advance order, and the dining room feels familiar and warm, with Schlemmer Atlas awarding 3,5 Kochlöffel (2026).
