The story
Le Bac à Traille, at 16 rue des Cévennes in Valence, is a bistronomic French-Japanese kitchen that holds a 2026 Michelin Bib Gourmand for good cooking at good value. It shares its premises with La Cachette, the gastronomic restaurant that holds the city's Michelin star, and both are run by Chef Masashi Ijichi.
Chef Masashi Ijichi builds the menu around produce from the Drôme and adjusts it to the season. Japanese ingredients appear in restrained amounts, so the flavour of the local product stays clear. The emphasis is on accurate cooking times and balanced seasoning.
The wine list is selected by sommelier Sébastien Garde and offers a varied range. The room is relaxed, close to the banks of the Rhône, and the plates are generous and refined, meant for sharing.
