The story
Arbane, at 7 rue Noël in Reims, holds one Michelin star (2026) for the French cooking of chef-owner Philippe Mille. His kitchen takes Champagne and its terroir as the starting point.
Philippe Mille won the Bocuse de bronze in 2009 and was named Meilleur Ouvrier de France in 2011. He had already earned two Michelin stars before opening Arbane, where he cooks a more personal version of his cuisine. The tasting menus are built around the region.
Dinner centers on Ode à la vigne, six courses inspired by the terroir (230 €). Le Millésimé gathers his signature dishes, among them coral langoustines and scallops (290 €). Expression végétale follows leeks, asparagus, morel and buckwheat, and ends on pear with Champagne (150 €). Lunch from Monday to Friday has Premier Cru, three sequences that follow the day's market (80 €).
Arbane occupies a mansion built in 1874 by the Fortel family, with two levels that pair the building's history with a contemporary feel. The Vines lounge is set aside for a drink before or after the meal. Head sommelier Valentin Gallais pours Champagne alongside bottles from other regions. The Fortel lounge seats up to 12 for private tables. The Smart Green Guide gave the restaurant 4 Radishes in 2026.
