The story
Le Cinq is a French restaurant at 31 Avenue George V in Paris, set inside the Four Seasons Hotel George V. It holds three Michelin stars in the 2026 guide.
Christian Le Squer, born in Brittany, has run the kitchen since 2014 and led it to its third star. His modern French cuisine takes French culinary heritage as a base and updates it, which he likens to craftsman's work. Pastry is overseen by Michael Bartocetti, who buys from small farms.
Line-fished sea bass comes with caviar and buttermilk, a flavor pairing from the chef's childhood. Spaghetti gratin is made with truffle, ham and artichokes. Foie gras "like a pebble" is poached in an iodized vinegar broth. Dublin Bay prawns arrive with warm mayonnaise and buckwheat pancakes.
David Piquet directs the wine program, which earned a Wine Spectator Best of Award of Excellence in 2023. The tablecloths, china and silver in the dining room were made specifically for the hotel.
