The story
Contraste, at 18 rue d'Anjou in Paris 8, is a modern cuisine restaurant that holds a Michelin one star (2026). The kitchen builds its menu around the sea and the garden, and the room and wine list follow the same contrasted approach.
Antoine Perchoc took over the kitchen in March 2026, after two years as sous chef beside Louis de Vicari. He trained at Le Pré Catelan under Frédéric Anton and joined Groupe Éclore in 2023. Rooted in his Breton origins, he puts seafood and vegetables at the center of the carte, pairing land and sea in dishes the restaurant describes as iodine-edged and deliberately contrasted.
Photo captions in the gallery show a warm shrimp salad with red cabbage and red cabbage juice, and a dish of chard, fir, watercress, black garlic, mayonnaise and gratin. The restaurant says its plates are clear and seasonal, respectful of the year's produce and of local terroir.
The dining room is a mirror-finish space designed with architect Michel Amar, using green and black marble and leather. The wine list was developed with Anselme Selosse, creator of the original Contraste cuvée, and includes older vintages that growers usually keep aside.
