The story
Colvert sits at 30 rue des Grands-Augustins in Paris's 6th arrondissement, a modern cuisine restaurant that earned a 2026 Michelin Recommended distinction. The bistronomie kitchen works with seasonal produce, and the wine list leans toward Burgundy, Alsace and the Champagne region.
Baptiste Borderie leads the kitchen. He trained at starred houses, including the Trianon Palace under Gordon Ramsay and Joël Robuchon's kitchen in Macau. The weekday lunch is a three-course menu that changes each week with the chef's ideas and the day's deliveries. Dinner adds limited editions made in very small quantities.
The Salle à Manger is on the first floor, close to the kitchen, with a view of the glass-fronted wine cellar. A single large table seats up to 12 guests for dinners with friends, business lunches or celebrations. Guests can choose a tasting menu or shared plates.
