The story
Alan Geaam, at 19 rue Lauriston in Paris's 16th arrondissement, is a modern French restaurant with Lebanese influences. It holds one Michelin star (2026), and the We're Smart Green Guide awards it two radishes (2026).
Alan Geaam is self-taught. He spent around twenty years learning largely from cookbooks and the press before settling on a culinary identity of his own. Born in Liberia and raised in Lebanon, he arrived in Paris in 1999 and worked construction and dishwashing in a Lebanese restaurant before taking his first chef's post.
The Signature menu runs to seven courses. Langoustine comes in a chich-taouk style with morels and peas, and matured beef appears with beetroot, chickpea, hibiscus and sumac. Cuttlefish is served with saffron orange juice and a potato siphon. Dessert might be kiwi with meringue and dill, or milk and honey with candied citron. The courses shift with the season.
