The story
Jérôme Nutile, at 351 chemin Bas-du-Mas-de-Boudan in Nîmes, is a modern cuisine address that holds one Michelin star (2026). Meilleur Ouvrier de France Jérôme Nutile runs the gastronomic restaurant and a bistro on the Mas de Boudan estate. The bistro, Bistr'AU, also carries a Michelin Bib Gourmand (2026).
The gastronomic restaurant serves seasonal, refined cooking built on fresh produce, with tasting menus named for the Camargue and the Garrigues. Bistr'AU takes a more relaxed approach, with bistro plates that put market produce first. Three guest rooms and a suite sit above the gastronomic restaurant, and a private room suits events.
The estate keeps a herb plot where thyme, chives, lemon balm, sage and several mints are picked through the seasons. Micro-greens and edible flowers come from Alma Farms in Nîmes. The GreenFood label recognises the use of local or organic ingredients, waste sorting and a vegetarian menu.
