The story
Skab is a French restaurant at 7 rue de la République in Nîmes, opposite the Arènes, and it earned one Michelin star in 2026. The modern French kitchen is led by chef Damien Sanchez, who cooks with produce from the Gard and the wider Occitanie region.
Damien Sanchez grew up in Nîmes and builds his menus around the ingredients of the surrounding countryside. The kitchen works directly with local producers, and the seasons decide much of what appears on the carte. Le Figaro singled out a fillet of Saint-Pierre, pan-seared and served over a vegetable broth, with fennel cooked three ways, including as a broth and as a confit. The restaurant also holds one radish in the We're Smart Green Guide (2026), which reflects its attention to sourcing.
The dining room is quiet and refined, and many of its furnishings were made by artisans from the Gard. When the weather is warm, a shaded patio, typical of the region, becomes the place to eat. Couples, friends and family all book tables here, and the restaurant can also be reserved for private and professional events outside regular service.
