The story
Prairial, at 1 place Hubert-Mounier in Lyon, holds one Michelin Star (2026) for a seasonal tasting-menu kitchen set in the middle of its dining room. The guide's note is brief: high quality cooking.
Gaëtan Gentil trained in Michelin-starred houses beside Yannick Alléno, Emmanuel Renaut, Denis Fétisson and Jean-François Piège. In 2015 he opened Prairial with Céline Boinon, who is both sommelier and dining room manager. Tables are arranged around the kitchen, so the cooking happens in plain view.
Menus change with the season and are served to the whole table, with no vegetarian or fish-free version. The Confluence Menu (€99) is offered at lunch only. The Prairial Menu (€135) runs to 8 sequences. Producers named on the site include market gardeners, freshwater fishers, livestock farmers and gatherers. The restaurant has been starred since 2016 and has carried a Green Star since 2021.
The wine list holds more than 900 references, with a lean toward organic and biodynamic estates. Both menus can be paired with wine (€59 and €79), and rare spirits and non-alcoholic drinks are developed alongside the cooking. For groups of up to 10, a separate Shared Table sits apart from the main room, closer to the kitchen.
