The story
Rustique is a contemporary restaurant at 14 rue d'Enghien in Lyon, awarded a Michelin Star in 2026 for high quality cooking.
Maxime Laurenson describes his cooking as raw and generous, like peasant life. He gives the floor to wild nature and the farmers who tame it. Wood fire and fresh vegetal flavors set the tone, and the restaurant lists a tasting menu alongside its wine list.
