The story
La Table des Climats in Dijon, at 12 parvis de l'Unesco, is a modern cuisine restaurant that Michelin recommended in 2026. Chef Alexandre Clochet-Rousselet builds his menus around Burgundian produce, and each course is planned alongside wine.
Alexandre Clochet-Rousselet grew up in Burgundy and trained in two-star kitchens in Bordeaux and Saint-Émilion before returning to his home region. He describes his cooking as rooted in local terroir but open to innovation. The house calls its pairing approach vinostronomy, and its wine list holds more than 800 references from Burgundy and beyond, including grands crus and small private estates.
Menus change with the seasons and the arrivals of produce. Recent courses have included Bresse poultry with vin jaune and salsify, and a pikeperch pithiviers with local wild mushrooms and a Burgundian matelote. Meals are served in a vaulted room beside the grand cru wine cellar, with a terrace facing the Grande Chapelle of the former Hôpital général. Diners can watch the kitchen brigade through the pass.
