The story
William Frachot, at 5 Rue Michelet in Dijon, holds two Michelin stars (2026) for its modern cuisine rooted in Burgundy. The restaurant sits inside the Hostellerie du Chapeau Rouge, in the historic centre of the city.
Chef William Frachot took over the Hostellerie du Chapeau Rouge in August 1999. He describes his cooking as contemporary Burgundy cuisine, made with local and seasonal ingredients. Dishes such as Bresse pigeon with burnet seed and egg in meurette, a tribute to tradition, reinterpret the region's classics.
The dining room is calm, and the kitchen asks guests to trust the menu and let the meal unfold. Maxime Brunet and Manuel lead the wine list, the pairings and the alcohol-free creations. The Smart Green Guide awarded the restaurant one radish in 2026, and smart attire is expected.
