The story
Domaine d'Auriac, at 2535 route de Saint-Hilaire in Carcassonne, France, serves classic cuisine built on regional produce. The Michelin Guide lists the estate as Recommended for 2026, and the Smart Green Guide awards it one radish.
The Restaurant Bernard Rigaudis is the estate's original dining room, and its kitchen works with produce from the surrounding terroir. The gastronomic menu runs in courses: a starter, a main and a dessert, preceded by a house aperitif and amuse-bouches. Wines from the region are chosen by the sommelier, who can also suggest nearby estates for guests who want to continue the tasting.
Le Bistrot d'Auriac keeps the same Southern spirit in a looser format. The cooking follows the market and comes off the wood-fire grill. Tables face the 18-hole course, and players often stop in for lunch or a drink after a round.
Through a partnership with Domaine Rhodes Gouyric in Cazilhac, guests can join guided tastings and meet the winemakers behind the Pays Cathare crus. The estate's gardens, golf course and historic setting sit close to the medieval city, so a meal here often fits between visits to the local castles and abbeys.
