The story
Nolla, at Fredrikinkatu 22 in Helsinki, is a Finnish modern cuisine restaurant that earned the Michelin Bib Gourmand for 2026, recognised for good quality, good value cooking. The kitchen cooks from a strict sourcing map, and the menu changes eight to ten times a year.
Sourcing rules are set by distance. Vegetables come from within 100 km of the restaurant, meat from up to 200 km, fish from within 250 km and dairy from less than 300 km. The grill runs on Finnish organic birchwood charcoal.
Vegetables and grains make up twice the share of the menu that animal protein does. The kitchen buys whole animals, favours poultry and game, and uses no farmed fish.
The starters have included cured pike perch with blood orange and fermented pumpkin seed dressing, and beetroot tartare with black walnut cream. Mains have featured grilled burbot with crayfish butter sauce, smoked lion's mane with fermented shiitake sauce, and roasted white-tailed deer with savoury toffee sauce.
Dessert has ranged from milk-bread ice cream with coffee oil to baked raspberry ice cream with tart cherry. Wine, mixed and non-alcoholic pairings are offered alongside the tasting menus.
Nolla was founded by three chefs from Serbia, Catalonia and Portugal around environmental and social responsibility. The restaurant also holds a 4 Radishes rating from We're Smart Green Guide for 2026.
