The story
LYST, at Havneøen 1 in Vejle, Denmark, is a seafood-led kitchen that earned one Michelin star in 2026. The restaurant sits inside Fjordenhus, the building designed by Olafur Eliasson, on the edge of Vejle Fjord.
Chef Daniel McBurnie builds each menu around the weather, the season and what nearby producers bring in. Fish and shellfish take up a large share of the courses, with herbs and greens from close fields and forests. The kitchen works with local fishermen, farmers and foragers, and aims to source within a 100-mile radius.
The dining room follows the curved forms of Fjordenhus, with arched windows and a custom soundscape that runs through the evening. The White Guide named LYST global masters level in 2026, and its reviewer described a circular glass table with a serving station at its center. A full dinner lasts about four hours.
The menu costs DKK 2.500 and includes mineral water, coffee and tea. Beverage pairings range from DKK 1.400 for the home-spun pairing to DKK 7.000 for the legendary alcohol pairing. The wine cellar sits below sea level, and the sommeliers suggest pre-ordering bottles.
