The story
Noma is a New Nordic restaurant at Refshalevej 96, 1432 Copenhagen K, and earned three Michelin stars in 2026. The kitchen has cooked the landscapes of the Nordic region for more than twenty years, and its three-star recognition sits alongside a long run of international rankings.
Pablo Soto is Executive Head Chef, and Mette Brink Søberg leads research and development. The team is currently cooking in Los Angeles and has announced a return to Copenhagen this August. The menu is moving from three seasons to twelve, so each month will carry its own expression, shaped by the ingredients and ideas of that moment.
The early aim was a cuisine built only from Nordic produce, but a goulash made from local ingredients alone did not taste new. The kitchen turned to foraging for wild flavours and to traditional preservation for new vinegars, marinades and umami-rich building blocks. Noma was named the world's best restaurant by The World's 50 Best Restaurants in 2021.
The restaurant occupies a former whaling depot with exposed wooden beams that are nearly three hundred years old. Pontus Elofsson, head sommelier for eight years, shaped a wine list built around organic, biodynamic and natural bottles. In 2012 a sailing ship carried 8,083 bottles from France to Copenhagen, and Noma ordered 300 of them.
