The story
Ark is a vegan fine dining restaurant at Nørre Farimagsgade 63 in Copenhagen, rated "Very fine level" by the White Guide in 2026. The plant-based kitchen cooks an eight-course tasting menu around local vegetables, foraged ingredients and mushrooms from its own Funga Farm.
Executive Chef Brett Lavender brings nearly two decades of experience from England, Australia, New Zealand and Japan. Mushrooms carry the menu. Blue oyster appears as a raw purée on an oyster shell, then yakitori-grilled with an umami emulsion until it eats like chicken breast. A grilled hedgehog mushroom tastes of pork and comes with spring onions, cabbage, peas and wild chive blossoms.
White asparagus with fermented plum, black garlic cream and toasted seeds balances acidity, umami, bitterness and texture. The White Guide praised the kitchen's herbs, and a tarragon sorbet on sesame crumble with wakame seaweed oil shows why. Poached rhubarb with lychee and mirin finishes on lemon thyme. Michelin lists Ark as Recommended for 2026.
There is no printed menu, so guests listen as each dish is explained. Service is in English, led by Australian-born owner Jason Renwick. The space is warm and bright, with natural materials and Danish design, though the acoustics make listening harder than it should be. Wine or juice pairings follow the food closely. The bar adds natural and biodynamic wines and Nordic-inspired cocktails.
