The story
Noel, a modern cuisine restaurant at Ulica Popa Dukljanina 1 in Zagreb, holds one Michelin star from 2026. The kitchen works with a tasting format that runs for at least three hours.
Bruno Vokal led the kitchen from 2020 to 2023 and returned to it more recently. The 2026 Gault&Millau entry, which scored Noel 17, credits his return with new energy and a distinctive creative touch. The Essence menu carries more than a dozen individual dishes, sometimes with a surprise added by the chef.
The meal opens with four amuse-bouche, including an oyster in white seafood sauce topped with caviar crumble. Adriatic prawn comes with squash, tangerine and caper oil. Dry-aged local trout arrives with almonds, broccoli and onion. The veal sweetbread with beurre blanc is the dish most often singled out as the evening's peak.
The wine list is extensive, and the sommelier Kristijan Harjač, Croatia's sommelier champion, chooses pairings for each course. Dessert opens with a modern take on šnenokle, served with green apple, gingerbread and cardamom. The Essence menu is priced at 145 € per person, and the wine pairing is 75 €.
