The story
Blue Water Cafe sits at 1095 Hamilton St. in Vancouver's Yaletown, where a West Coast seafood kitchen holds the AAA Four Diamond award for 2026. The restaurant describes itself as an approachable fine-dining seafood restaurant, with a menu built on local catches and certified sustainable choices.
Executive Chef Frank Pabst has directed the kitchen since 2003. His training includes Michelin-starred restaurants in Germany and France. The cooking follows what the Pacific coast supplies, and the restaurant is a founding member of the Ocean Wise program. Pabst calls his approach "complexity without complication."
The à la carte menu moves from chilled seafood and the sushi bar to plates from the waters. Regulars and first-timers alike order the Dungeness Crab Roll, the Yukon Arctic Char with dungeness crab and ikura, and the Blue Water Cafe Tower, a three-tier seafood tower that includes a whole chilled lobster. On the garden patio, Sunseeker afternoon hours bring oysters, raw bar favourites and cocktails by Bar Manager Ben McNamara.
The dining room looks onto the open kitchen and the Japanese raw bar. In warmer months, the heated garden patio sits under a retractable awning for sun or shade. The wine cellar holds more than 8000 bottles, and the program earned a Wine Spectator Best of Award of Excellence in 2016.
