The story
Légende, at 255 rue Saint-Paul in Québec City, is a Canadian restaurant that earned one Michelin star in 2026 for high quality cooking.
Chef-owner Elliot Beaudoin reworks Québec's regional traditions with techniques drawn from kitchens overseas. The menu runs as a six-course tasting or as à la carte dishes. Plates are named after the plants in them rather than the protein, so a wild herb or root usually leads. Reviewers describe the cooking as minimalist and precise.
The kitchen cooks only with local products that change with the seasons. Acadian sturgeon comes from Carters Point in New Brunswick, wild plants from Albanel, vegetables from Les Jardins d'Inverness, and micro-greens from Trois-Rivières. Estuary fish and forest game form the backbone of the menu. One guest singled out the venison plate and the mushroom dessert as reasons to visit.
The dining room sits under vaulted ceilings, with a chef's counter, original paintings and hanging plants. Head sommelier Caroline Beaulieu guides the wine pairings and explains the story behind each bottle. Wine Spectator gave the wine list its Best of Award of Excellence in 2017.
