The story
Ferment, at Alfred Algoetstraat 1 in Sint-Kwintens-Lennik, is a brasserie that received a Michelin Bib Gourmand for 2026, the guide's mark for good quality, good value cooking. The room sits in the Pajottenland, where the menu blends classic brasserie dishes with seasonal suggestions.
The kitchen draws on the approach of Sir Kwinten, the two-star restaurant led by Glen Verhasselt, and that influence shows quietly on the plates. Authentic brasserie classics sit alongside changing seasonal ideas. The product comes first, from the ingredients on the plate to the wines in the glass.
The grill section includes a dry-aged beef burger with cheddar and tomato salsa, a double entrecôte and a filet pur "Holstein". Sea bass comes with tabouleh and sauce vierge. Desserts include rice pudding with brown sugar and crème brûlée. The wine list is put together by sommelier Yanick Dehandschutter, and the restaurant pours plenty of geuze and lambic.
