The story
Quadras is a French restaurant at Malmedyer Straße 53 in Saint-Vith, Belgium, and the Michelin Guide awarded it one star in 2026 for high-quality cooking. The kitchen belongs to chef Ricarda Grommes, who opened the house in spring 2016.
Grommes trained with Walter Schröder at Le Luxembourg in St.Vith. She then spent a year at Le Clos Saint-Denis in Kortessem under Christian Denis, mainly as garde-manger, and two years at Waldhotel Sonnora in Dreis/Wittlich under Helmut Thieltges, where she worked as garde-manger and poissonnier. In autumn 2010 she went independent at Le Luxembourg, building a loyal following over five and a half years. Quadras followed in 2016, opened with her husband Kevin Ohles.
The dining room seats twenty. Light colours and fine metals set the tone, and the interior sits between design and classic styling. The restaurant is on the roundabout as you enter the town, which is where Gault&Millau 15.5 (2026) noted it is hard to miss. The guide described it as comfortable and cosy, a good place to discover Grommes's cooking.
