The story
Haut is a modern French restaurant with Asian fusion influences at Leopold III-laan 2 in Ostend, Belgium, on the 28th floor of the SKY Towers. The Michelin Guide awarded it one star in 2026, and Gault&Millau gave it 15.5 points the same year.
Dimitri Proost trained classically in Belgium, then studied Japanese cuisine in depth. His santoku knife points in several directions at once, and the menu follows that restless curiosity. Sea-inspired creations lead the kitchen, with flavor and simplicity kept at the center.
The holiday takeaway menu shows how the kitchen works. The 2025 edition opened with flatbread topped with North Sea fish rillette, followed by North Sea crab with citrus, parsley root and caviar. Lobster bisque came next, then pheasant with celeriac purée, chicory and cranberries. Chocolate with orange and hazelnut closed the meal. The vegetarian version swapped in hummus flatbread and a ceviche of yellow beetroot.
The dining room and terrace look out over the coast and the city, a view Gault&Millau singles out in its praise. Vegan and vegetarian dishes appear on the regular menu, not only as substitutes. The wine list holds more than two hundred labels, chosen for balance and character.
