The story
Merry is a neo-gastronomic restaurant at Rue des Carmes 15 in Liège, rated 13.5 by Gault&Millau in 2026. The cooking is seasonal, sustainable and casual.
The founders met at hotel school in Namur. They worked in Michelin-starred Belgian houses, then in Paris at Clamato and Dauphin, and spent almost three years in Oceania and Southeast Asia. Back in Belgium they were sous-chefs at Couvert-Couvert and Humus et Hortense before returning to Liège to open Merry.
A five-course menu (75€) is served every evening. An à la carte option runs Tuesday to Thursday for tables of up to five. Both change monthly. A recent menu paired old tomato varieties from the Potager de la Dîme with blackcurrant and fresh goat cheese, and put a tartare of line-caught fish beside fig leaves and barbecued cherries. The beef came from the Ferme de Tabreux, with Romesco and pearl barley risotto. Suppliers such as Poissonnerie Saint Paul and Bison d'Ardennes fit the 1 Radish the We're Smart Green Guide gave in 2026.
The list favours living wines from small estates. Pairings come as four glasses (40€), four half glasses (25€) or a homemade non-alcoholic version (30€). Guests with allergies, intolerances or vegetarian needs are asked to mention them when booking, and the kitchen adapts the menu.
