The story
Escabèche is a French restaurant with Japanese touches at Dumortierlaan 94 in Knokke-Heist, rated 15 by Gault&Millau in 2026.
Chef Kim Verhasselt, a Mastercook of Belgium, builds his menus around seasonal produce: tender game in winter, delicate fish in summer. The à la carte includes bluefin tuna tataki with mango chutney and ponzu, and langoustine carpaccio with rhubarb and red shiso. Japanese and Mediterranean accents run through the French base.
Lisbeth Morbee hosts the room, while maître d'hôtel Olivier, a sommelier, matches the wines. The "De smaken van Escabèche" menu is €90, and a two-course lunch is €45. Michelin lists Escabèche as Recommended for 2026.
