The story
Karel De Stoute is a modern French restaurant in Gent, Belgium, at Vrouwebroerstraat 2 in the Patershol district. Gault&Millau awarded it 15 points for 2026, and the restaurant has been a favorite with Ghent gourmets for more than fifteen years.
Chef Thomas De Muynck leads the kitchen, and the menu changes often. The restaurant describes its cooking as eclectic and always new, built on classical training but willing to bend the rules. Wine pairings are adjusted to suit the creations on each course.
The menu on the website has featured Otoro tuna with goose liver, sesame and watermelon, and mackerel with wasabi, kohlrabi and furikake. Other courses have included oyster with buttermilk and rhubarb, lobster with fideuà and girolles, and veal Lozère with bordelaise. Lunch is €55, five courses are €100 and six courses are €115, with wine pairings from €40.
