The story

BORIS & MAURICE in Gent: French Bistro Cooking in Sint-Amandsberg

BORIS & MAURICE is a French bistro in Gent, at Antwerpsesteenweg 329 in Sint-Amandsberg, where the bistro kitchen cooks seasonal dishes with produce from local suppliers. The Michelin Bib Gourmand it received in 2026 recognises good-quality, good-value cooking. The restaurant sits just outside the centre, close to the cemetery.

Boris Mahy's cooking

Boris Mahy runs the kitchen with an approachable, creative approach. Le Fooding's recent visit singled out extremely fresh sea bream crudo with a preserved lemon vinaigrette. Atlantic cod arrived with beurre blanc, leeks and herring roe, and lamb noisette came with spring carrots and savoy cabbage stoemp.

The room and the counter

Maurice Van Damme looks after the bottles while Boris cooks. The room is bright and unfussy, with Thonet-style chairs, a cream-coloured counter and globe lighting. Dessert can be a vin jaune crème brûlée, a fitting finish to the French-inspired menu.

Who are Boris and Maurice? They’re the two owners of this radiant, French-inspired bistro (Thonet-style chairs, a cream-colored counter, globe lighting), who have made their mark just a stone’s throw from the cemetery. As for their roles, it’s pretty clear cut: Boris (Mahy) plays in the kitchen, while Maurice (Van Damme) juggles the bottles. The last time we went, we ordered all of the following à la carte: pumpkin croquettes dipped in a creamy paprika aioli; extremely fresh sea bream crudo with a tangy preserved lemon vinaigrette for added zing; tasty vitello tonnato blushing alongside some slow-roasted beetroot; perfectly cooked Atlantic cod doused in beurre blanc sauce, leeks and herring roe; delicious lamb noisette with a full-bodied jus, served with spring carrots and savoy cabbage stoemp (mash); before a decent vin jaune crème brûlée. // Anita Kane
