The story
CCnomie, at rue Haute 38 in Falmignoul near Dinant, holds a Michelin Bib Gourmand for 2026 for its country cooking. The restaurant sits inside a hotel and is run by David Coisman and his wife, Marie-Françoise Charlier, who built it around products from the local terroir.
Coisman describes the food as bistronomic: seasonal, rooted in regional produce and made with a family spirit. The menu is rewritten every four weeks, so what arrives on the plate follows what the region offers at that moment. Gault&Millau gave the kitchen 14 points in 2026 and singled out a chef who plates his dishes meticulously and without fuss.
The Gault&Millau write-up names two plates: an oxtail croquette with green apple flavours, and a rack of lamb with small stuffed vegetables and olive pommes dauphine. The kitchen is large and open, so guests watch the chef assemble the generous, precise plates.
The restaurant occupies a house of rough natural stone, and the welcome is warm. The wine list is chosen with regional merchants and is described as modern and committed, with the aim of pairing bottles closely to the seasonal dishes. The restaurant serves lunch and dinner from Thursday to Monday and is closed on Tuesday and Wednesday.
