The story
Maxime Colin serves French cuisine at Pastoorkesweg 1 in Kraainem, on the edge of Brussels, and carries a Gault&Millau score of 15 for 2026. The restaurant sits beside the lake in a wooded park.
The restaurant opened in 2016, the same year Gault&Millau named Maxime Colin its Young Chef of the Year. He describes his cooking as constant, intuitive and inspired, with carefully chosen products left to taste of themselves. The kitchen follows the rhythm of nature, and each plate is meant to point back to a producer or a terroir.
The dining room is contemporary and warm, with the water just outside. Service is attentive and discreet. A terrace and a private room are available for groups and private parties.
