The story
Daily 3000 is a plant-based bakery and vegetarian deli at Rue Antoine Bréart 20a in Saint-Gilles, Brussels, and it was listed by Le Fooding in 2026. The counter bakes wild sourdough, focaccia and cinnamon rolls each morning, and the whole kitchen works without meat.
Sidney Lauwers runs the kitchen, bringing experience from Savage in Brussels and Lyle's in London. The dough gets time: real wild sourdough made from flour, water and salt. Everything served is 100% vegetarian and leans plant-forward, and anyone with allergies can ask the team at the counter.
The deli case holds pizza by the slice, pillowy pizzette, funky sandwiches and colourful salads. The Brunchizzeta (a pizza slice with rocket and two fried eggs) costs €10.50, and the counter plate, a selection from the deli with bread, is €16. Sweet options include a cinnamon roll at €4.20, a cookie at €4.50 and a 100% spelt loaf at €6.50.
The space sits where Grammes used to be, with azure tiles and a chilled counter in view as you order. Locally sourced pantry staples line the shelves, and the coffee comes from Brussels roastery Power Roasters. Cold drinks include a cold brew tonic at €7.00 and a Smile kombucha at €4.00.
