The story
Coquum, at Rue au Bois 226 in Brussels, is a Nordic-inspired seafood restaurant that Gault&Millau scored 14.5 in 2026. The kitchen works with a single menu built on the best produce of the moment, and most of it comes from the sea.
Cédric Dassonville, known as the "viking", cooks with produce that is chosen carefully and used whole. Salting, smoking and fermentation do much of the work. Small Asian touches appear here and there, picked up on his travels. Gault&Millau singles out the refined surf and turf pairings and a curlew tartlet.
The dining room is styled like a Scandinavian fisherman's hut, while the kitchen feels contemporary and bold. The drinks list includes only natural wines and beverages, with a non-alcoholic selection available alongside the food. Vegetarian, pescatarian, lactose-free and gluten-free options can be requested when you book.
