The story
Tanuki is a Japanese restaurant at Oude Gentweg 1 in the centre of Brugge, and Gault&Millau awarded it 14 points in 2026. Chef Ivan Verhelle has run the kitchen for more than 35 years, with Japanese cuisine as its focus.
Ivan Verhelle and second chef Akihisa Kawakami cook a Japanese menu built on raw fish. Gault&Millau's reviewers single out the sashimi, which is cut by the traditional rules and is pleasing to look at. Freshness is treated as the first priority.
Sukiyaki is a beef and vegetable hot pot, cooked at the table in soy broth. Yosenabe is a fish, lobster and vegetable pot cooked in a clear fish broth. Both are prepared for parties of two or more.
The house ice creams come in ginger sorbet, azuki and green tea. The mame-daifuku is a rice cake filled with sweet azuki bean paste. Menu Tsuru combines sashimi, yakitori, sushi, tempura and filet mignon teppanyaki.
