The story
Maison Colette, at De Trannoyplein 17 in Westerlo, is a modern French kitchen that holds two Michelin stars for excellent cooking (2026). Chef Thijs Vervloet leads the kitchen, and his wife Lore hosts the dining room in a former doctor's house in Tongerlo.
Thijs Vervloet works from the classic French repertoire, but his style is lighter than the word classic suggests. He pairs precise nuance with generous sauces and quietly layered flavours. Gault&Millau gave the restaurant 17.5 points in 2026, noting that he moved from his earlier location by the ponds to a carefully restored doctor's house. The room keeps that history visible, with a warm, welcoming feel.
The signature menu opens with Belgian veal tartare, cauliflower cream and Imperial Heritage caviar. Lobster appears twice, once as a salpicon with confit tomato, Taggiasca olive and tarragon, and once as a homardine with cappelletti and fennel. Sea bass follows with a Mediterranean perfume, and dessert ends on Belgian strawberry with pavlova, almond and black pepper. A four-course market menu is served on weekday afternoons, and a wine pairing and a non-alcoholic arrangement are available. A vegetarian alternative can be requested when booking.
